I have driven to Chiangrai twice, both times avoiding Bangkok by different routes.

Not sure how to share with you, perhaps best you ask what you want to know.

My GPS only got SG/MY and Brunei maps. Can I add in additional for Thailand, Australia and Taiwan?

Yes. If your GPSr is capable of storing maps in the MAP directory in a MicroSD card. All the additional maps can be stored in separate files in the directory.
